Strawberry Banana N'ice Cream

One of the things that I was worried about when I began I journey to a plant-based lifestyle, was how on earth was I going to live without eating ice cream. I was like most children growing up, where ice cream was a year round favorite and every-time I had a opportunity to consume it.. I DID! So eliminating dairy from my lifestyle meant I could no longer consume this frosty treat and that almost made me second guess my decision. Well, not really, but I was tough to think that I would never ever consume ice cream, ever again.

That is, until I heard about banana n'ice cream. Some call it vegan ice cream, some call it banana n'ice cream and others call is vegan soft serve. Whatever you choose to identify it as, just know it serves its purpose. That is, being a nice (no pun intended) replacement for ice cream. Not only is this a tasty treat, it is super easy to make and fairly quick too! First things first, you need to take some bananas and place them in a ziploc bag or whatever you use to store your frozen items. That way by the time you've completed this article, your bananas are well on their way to being frozen and providing you with a yummy treat.

I will not try to mislead you into thinking n'ice cream tastes just like ice cream, because, well.. it doesn't. BUT, it is a delicious substitute and will provide its own level of satisfaction!

Outside of banana n'ice cream being a healthy frozen treat, it is made of fruit so you can feel free to serve this for your family at any time of the day! Cool, right?? There are non dairy ice cream options sold at your local grocery stores, which is okay to have from time to time. However, if you are seeking a healthier option then n'ice cream is the way to go! Strawberry Banana N'ice Cream

Strawberry Banana N’ice Cream: To make the n(ot) ice cream, throw around 2-3 frozen bananas and a handful of frozen strawberries into a blender or food processor—adding a pinch of salt and 2-4 tbsp milk of choice (I use almond milk) for smoother blending if desired—and blend until you achieve a soft-serve texture.

Date Sauce: Wash about 12 oz of medjool dates or dates of your choosing. Remove the seeds from the dates. Put the dates into the bowl of a food processor or blender. Add 1 tbsp of vanilla extract, 2 tablespoons of water, and ⅛ teaspoon of salt. Process until very smooth, 5 to 10 minutes. Stop and scrape down the sides of the bowl every couple of minutes. If the sauce seems too thick, add a little water until you reach a smooth consistency.

Serve N’ice Cream in a bowl. Drizzle Date sauce over the nice cream and top with walnut pieces or your nut/seed of choice. Enjoy!
